Constructed during early settlement by a supervisor of colonial convicts, at the very epicentre of the market gardens which serviced Hobart, Clarence House is a heritage listed manor which remains largely unaltered since the 1830s. The finest barley, malted in the local area by specialist maltsters, is ground into ‘grist' in the five-roll Buhler mill, to be mixed with hot water in the impressive 16.5 tonne stainless steel semi-Lauter mash tun. The hot water enables the starches present in the grist to be converted into sugars, by the enzymes released during the malting process.
